Main Accountabilities:

Department budget

  • Run an efficient workforce
  • Reporting on a day to day basis to the head chef on all cleaning and maintenance issues
  • Control the waste environmental operating within the budget requirement
  • Control and manage stock levels of small kitchen equipment
  • Where possible manage use of water, gas and electricity costs

Resource Planning/People Management

  • Develop a strong team to deliver the business requirement
  • Train and Support the Back of House Team in order to consistently deliver to the expectation of both the executive chef/head chef and management.
  • Performance manage the team to ensure that each member is motivated, engaged and fulfilling their potential.
  • Conduct daily team briefings to inform the team of important business events, any issues from the previous day’s business
  • Conduct monthly meetings with key team players, supervisors to inform to departmental costs, payroll, year to date budget performance etc.

Service Delivery/Operations

  • Maintain and implement standard operating procedures to ensure a consistent delivery of excellence throughout the dept.
  • Work closely with the F&B manager to ensure good communication and team work, front and back of house.
  • Manage the waste/environmental contracts with Westminster/Epsom and Ewell
  • Manage the cleaning schedules across all food prep areas
  • Monitor and manage the Staff restaurant service facility maintaining a clean and comfortable environment for our staff

Service Quality

  • Manage all operational and associated production areas to the highest standards of hygiene and cleanliness in accordance with club guidelines and the legal requirement.
  • Check cleaning schedules at least twice daily in accordance with company procedures
  • Strive to deliver the EHO 5 Star rating
  • Maintain the kitchens to the highest standard making sure all maintenance and housekeeping issues are reported and followed through using the company logging process.

Health and Safety/Compliance

  • Implement and monitor all company policies and procedures
  • Comply and enforce the law in respect of health and safety, the club food policy
  • Monitor departmental security and liaise with the security manager on relevant security matters
