Main Accountabilities:

Department Budget

  • Prepare efficient budgetary plans for the restaurant
  • Maintain spending within budget, monitoring actuals and forecasts, and creating detailed reports on weekly, monthly and annual revenues and expenses
  • Maintain adequate operating stocks, ordering replacements in good time to ensure service and presentation standards are achievable, maintaining a system for recording and reducing breakages
  • Control operational costs identifying measures to cut waste through careful use of all operational equipment both front and back of house
  • Ensure the restaurant and all its contents are always maintained to an excellent and clean condition and in good repair, leading on any faults identified and reporting the same directly to the relevant departments
  • Contribute ideas for promotions and seek opportunities to enhance sales
  • Regularly review product quality and research new vendors

Resource Planning/People Management

  • Implement policies and protocols that will maintain future restaurant operations
  • Instil a “teamwork” environment and develop a culture of support across the team with a “can do” approach
  • Recruit, train and performance manage the team to ensure that each team member is motivated, engaged and fulfilling their potential
  • Develop the restaurant to an excellent standard of operation in line with LQA expectations
  • Nurture and cultivate the team to ensure good working relationships across all levels, addressing any personnel conflict immediately
  • Promote and maintain a good working environment within the department and good working relationships with all other departments in the Club
  • Train new and existing employees on excellent customer service practices, delivering superior service and maximising member satisfaction
  • Plan and produce rotas ensuring the right levels of service are maintained and costs remain in line with budget
  • Authorise staff holiday requests and report absence using the Fourth Hospitality system, encouraging individuals to plan in advance avoiding heavy demand towards year end and peak season
  • Conduct daily briefings to ensure all employees are kept informed of important events, promotions, and department/company performance
  • Appraise staff performance and provide feedback to improve productivity, training assistant managers to a similar level to carry out annual appraisals for all staff ensuring development needs are identified with a follow up process
  • Introduce regular “one to ones” with supervisory level upwards training them to devise the same strategy with the team to encourage performance and development
  • Be an ambassador for high quality dining and people management in London’s Clubland, be an employer of choice

Service Delivery/Operations

  • Be visible in the restaurant in this member facing role
  • Coordinate daily Front of the House and Back of the House restaurant operations
  • Ensure that all members and guests are welcomed at the door and seated quickly in a courteous, polite and helpful manner and address all guests in the correct manner with the correct title and tend to guests’ requirements promptly
  • Maintain and implement standard operating procedures to ensure that service excellence is achieved, and members enjoy a positive dining experience
  • Control beverage stocks, in order to ensure that margins are maintained within agreed budgets
  • To be fully conversant with the menu and wine list

Service Quality

  • Respond efficiently and accurately to member feedback, queries and complaints and where possible resolve the matter, before reporting them to a senior manager where appropriate
  • Maintain the restaurant to the highest standard, ensuring that all items of maintenance and housekeeping are reported and followed through 
  • To provide a positive ‘role model’ for the department
  • Manage the Clubs restaurants good image and suggest ways to improve it

Health and Safety/Compliance

  • Implement and monitor all company policies and procedures ensuring compliance and in particular to stay abreast of, and implement, new legislations
  • Comply with and enforce the law in respect of the Licensing Act as applies to the Royal Automobile Club
  • Observe and action as appropriate the Health & Safety, Hygiene and Fire Policies and Procedures as laid down by the Company, and particularly as they relate to the performance of your job
